Pumpkin Spice Oatmeal

This delicious oatmeal recipe will keep you full and satisfied for hours, not to mention cure those cravings for something sweet. It’s perfect to make the night before and enjoy as a breakfast on the go.



  • 1 cup      gluten free oats
  • ¼ cup     pumpkin puree
  • 2 tbsp.    maple syrup
  • ½ cup     almond milk
  • ¾ cup     water
  • ¼ tsp.     cinnamon
  • ¼ tsp.     vanilla extract
  • few grates of nutmeg




Combine all the ingredients in a container with a lid and store in the fridge for about 6 hours or overnight.


Optional toppings: pumpkin seed, pumpkin butter, shredded coconut, dates, nuts, cocoa nibs, fresh fruit….
